Hello again, everyone! I have always tried to eat really healthy, even on a college student budget. Lately I realized something. I stopped eating meat. It wasn’t intentional, but now I don’t really want it. I wanted to spice up my current meal plan, but wanted to try to keep to my current non-meat lifestyle. I didn’t want just salads and pastas, unless they were delicious. I also wanted vegetarian dishes I could pretty much make from scratch, and that were inexpensive. After some asking around and scavenging for meatless recipes, I found some healthy vegetarian recipes I think anyone would like to eat, whether they are a vegetarian or not! So, without further ado, let’s take a look at these easy vegetarian meals.
Greek Quinoa Salad: I know. This is a salad. But hey, we all know by now I am an avid salad lover. And it goes without saying that every vegetarian style diet has salads at some point. And honestly, everyone should eat salad every once in a while because they are so good for you. But I digress. This salad is easy to make, inexpensive, and super tasty!
I’m not big on olives myself, but I am getting more and more okay with tomatoes. I used to hate tomatoes, and only liked them if they were really cooked down. Now, I don’t mind so much as long as I can have a lot of other stuff with it. Like this yummy veggie salad! I love the addition of quinoa. Quinoa is kind of one of my favorite things now! Broccoli Quinoa Casserole: I don’t know about you, but I love casseroles. I don’t know if it’s because of my 4.5 years as an undergrad and going on 2 years as a grad student, but I love being able to come home and have the ability to reheat a nice tasty casserole. They’re so easy to make, and make great vegetarian dinner ideas. Toss in the ingredients, pop it in the oven, and savor it for the rest of the week.
Growing up, mom always made this broccoli chicken cheese casserole, and I loved it. So when I saw a similar one made with quinoa, well, I had to try it! I’m really into taking recipes I already had and swapping ingredients for quinoa to make a good vegetarian dinner. I did that with a vegetarian chili recipe a while back and it was good. Quinoa Enchilada Casserole: I swear this is my last recipe with quinoa. I just love the stuff, okay? It’s super healthy, easy to make, and you can get it in bulk bins for a pretty awesomely cheap price. Plus, casseroles are perfect for people with busy schedules, and you can find a lot of them that make easy vegetarian dinner recipes.
This is similar to another casserole my mom makes all the time. This puppy is great with some nice corn chips or even Fritos. I like the addition of avocado on top. I bet it adds a nice creamy flavor to the ooey gooey mess that is this casserole. This is gonna make a wonderful and healthy vegetarian dinner! Loaded Guacamole Vegetarian Tacos: Even vegetarians need Taco Tuesdays, okay? These awesome guacamole tacos look fantastic. Loaded guac, black beans and corn make these healthy vegetarian tacos pretty much the perfect southwest style dish. Plus, look at these gorgeous things. Yum.
I used to not be a fan of guacamole or avocados. I still don’t like them by themselves. Like, I’m not going to sit there with a bowl of guacamole and some chips and go to town. Not really my thing. But, I will eat it in wraps and tacos like these bad boys and thoroughly enjoy the rich creamy flavor it adds. And, tacos are one of those quick vegetarian dishes you can whip up in no time! Goat Cheese Quesadillas: Another favorite dish of mine is the quesadilla. Oh, I lived off of these things in high school. I was a purist. Plain cheese, with a little bit of salsa. Maybe some chicken every once in a while. Now, I’m all about the veggie quesadillas. This one pretty much has my favorite quesadilla veggies: squash and zucchini. And, check out that roasted corn pico there. So much yum.
These babies are easy to make, and you can use whatever local fresh veggies you can find as well. If you’re a fan of other veggies like bell peppers, mushrooms, whatever, feel free to add them in for some other wonderful flavors. Customize your quesadillas to your heart’s content. Penne alla Vodka: I can’t give y’all a bunch of great vegetarian dishes without pasta! I seriously live on pasta and salads. This Penne alla Vodka pasta is heavenly. I love vodka sauces. They’re so delicious, and easy to make. Since you cook down the vodka, it’s okay for those who are underage. So kudos there! This sauce would be good with practically any type of pasta, so don’t fret if you don’t have penne. Use whatever you have. Or, maybe see how it tastes over quinoa. Okay, slightly joking there.
