Hey, friends! I’ve been on a health binge lately! I’ve been really trying to kick start and revamp my healthy eating and fitness plans in order to prepare for my wedding. They say that being fit and healthy is 10% working out and 90% eating right so, for that reason, I’ve been extra conscious of what I eat. I’ve got tons of ideas for affordable and healthy recipes, but before I burst all over the place with my bajillion ideas, let me calm down and start this blog post in an organized manner. Let’s start off with salads!

I may have started off with salads because I may or may not be craving a salad right now. I seriously do love salads… and all fruits and veggies in general! Well, minus tomatoes, but it all depends on how you serve them. I’m not the kind of person who would pop a cherry tomato in my mouth as a snack. Anyways, let me share with you guys an awesome salad guide that shows you how to properly “build” the perfect salad!
Now making a salad is quite easy and they can be made affordably as well. In fact, the area that I live in sells kale for 98 cents per bunch (and it’s a pretty hefty bunch). When I bring the kale home, I chop it all up and put it in a gallon size bag. Then generally I take that bunch, throw in some sliced cherry tomatoes, dried cranberries, pistachios, some grilled chicken, fresh oregano, and bam! I’ve got an instantly delicious salad! Top it off with your favorite vinaigrette and say hello to tastiness! I love that salad recipes are totally customizable. You can make them however you want. This salad is by far one of my favorite salads ever! I could eat it literally every day of the year. No matter the season, this salad is always super good and refreshing. Alright, let’s move on from salads and talk about something you can eat that is healthy, affordable, and quick to make. I’m talking about stir fries!
Super Healthy Sizzlin' Stir Fry
Whenever I’m trying to plan a really good, healthy, but delicious meal, I always go for a chicken or turkey stir fry of some sort. The reason why is because they are super easy to make and quite affordable as well. Plus, you can throw in as many veggies, herbs, and clean meats as you want. What’s great about stir fries is that like salads, they are pretty customizable!
The particular stir fry I have shown above is super tasty and easy to make. It’s delicious, savory, and can be packed with tons of good, clean ingredients like carrots, broccoli, and snap peas. Plus, there’s plenty of good protein in this healthy recipe from the chicken. Top it off with brown rice and you’ve got yourself a stellar meal that is delicious and nutritious. Talkin' Bout Tasty Tacos
This delicious, healthy recipe is SUPER DUPER tasty. In fact, it’s one of my favorite things to eat. I’ll be open and honest, this recipe costs a little more to make than the other great recipes that I’ve shown you, but it’s still pretty affordable. It’s definitely cheaper than eating out! The original fish recipe calls for tilapia but it can easily be switched out for cod as another healthy alternative.
What’s great (and super healthy) about this recipe is that it has an awesome cherry tomato and corn salsa on it with a creamy cilantro jalapeño Greek yogurt sauce. You get all the delicious Mexican flavors but with cleaner, healthier ingredients. You can’t really beat that, now can ya?

I saved this recipe for the end because it doubles as both a delicious breakfast and a sweet dessert. Overnight oats are delicious and there are seriously SO many ways you can make them. From overnight oats that taste like apple pie to ones that have raspberries, overnight oats recipes are so diverse, not to mention tasty!
