The sun is starting to set earlier and earlier and what that means to me is that summer is over. Fall is upon us and with that comes cooler weather and a longing for all things cozy and comforting. Well, comforting as in comfort food if we’re getting specific. I can’t imagine anything better than ladeling myself a bowl of deliciously warm soup. It’s the ultimate comfort food. I know some might say that if it isn’t fried it’s not your friend...but to me comfort food goes way beyond a bucket of chicken.
If you’re finding yourself doubting my theory that soup is comfort in a bowl, then let me just ask you this: why do you eat soup when you’re sick?! Because soups taste amazing, you don’t have to chew, and it warms you up from the inside out. Soup is like nice warm hugs in a bowl that you can spoon directly into your face when you’re feeling under the weather, or even if you’re feeling perfectly fine! What’s not to love?
Being the soup lady that I am, I encourage you to prepare for some crazy mouth watering to happen by the end of this post. Three of the best soup recipes is all it’ll take. I don’t know about you, but I am all about chicken noodle soup. Chicken and rice is even better. It’s light yet filling and is oh-so tasty! I can’t say enough good things about this lunch and dinner special. I say ‘lunch and dinner’ because it is light enough to have at lunch but can be made hearty with the pairing of, hmm, let’s say an elaborate salad for dinner. Not to mention that this is no ordinary chicken and rice soup...it’s actually Chicken, RANCH, and Rice Soup. I kid you not, if you only get one thing from this post it should be that you make this immediately if not sooner. And then invite me over for dinner. I can almost taste it now. Yum! Bonus points if you serve it in a bread bowl like the one mentioned above, because bread bowls are life, and then you’ll have less dishes to do afterwards. What’s not to love about that? See? I told you bread bowls would come in handy!

Being from West Texas, spiciness is the key to my heart. Salsa, peppers, green chiles...you name it, I’ll eat it. The hotter, the better, I always say. So, naturally I couldn’t rattle off my favorite soups without the incorporation of one very important, and tasty might I add, recipe. Ladies and gents I present to you an amazingly great tortilla soup recipe. One of my all-time favorites in case you hadn’t caught that drift yet. It’s warm, spicy, and basically a taco in soup form. What could be better than that, you ask? Pretty much nothing. It’s legit amazing. Hello, whoever created this was a pure genius, and knows the direct path to my heart. This step-by-step guide is not allowed to end without the addition of cheese and avocado to top it off because NOM.

Last on the list is one that I usually devour at Panera Bread because it’s fantastic...but homemade is that much better and you get much more bang for your buck. Leftovers for dayzzzz! Potato soup is already rich, creamy, and the perfect thick and hearty soup to have on a chilly day, and naturally when you add cheese and bacon to something it becomes like a billion times more delicious. Soup is the cure to homesickness, stress, heartbreak, sadness, or just any ol’ bad day! It’s also incredibly enjoyable on the good days too. And, of course it is absolutely perfect for those chilly days when you want to curl up in a nice chair with warm socks and a comfy sweater. Add a bowl of yummy soup, and after that first bite you’ll almost forget how dreary it is outside. Don’t forget your side stack of crackers! I prefer Saltines or water crackers by my side when I take my first spoonful, but I’ll leave that up to you. And, of course, we can’t forget the cheese, especially in the potato soup!
